Water meaning
The alchemical sign for water is a downward triangle. In the old physics it is cold and wet: what sinks and gathers. It is not the zodiac sign for Aquarius, which is two waves.

Where it comes from
Cold and wet: phlegmatic humor, winter, the element later writers assign to feeling. The triangle points down because water finds the low place. In alchemy it is also a name for a stage of the work, the dissolve, which is an operation and not a puddle. The word covers more than one job. Good texts tell you which.

When a recipe says water it may mean the element, the liquid in the flask, or the mercurial solvent that opens a body. Context is not pedantry here. It is how you avoid drinking the metaphor or metaphorizing the drink.

Cold is not unkind
Cold, in Aristotle, is a quality, not an insult. Water binds what fire loosens. A phlegmatic person, in the old medicine, is not a failed choleric. The four are a closed set. Removing one collapses the physics.
